The Action menu differs considerably from one Category to the next. However, it always begins with a Create item (that can be invoked by typing Command K) and as its name implies redraws the current object with all the current settings.
Below we list for each Category the items in the Action menu that are appended to the above Basic Action menu. Depending on the particular object, certain items may be missing, and others may be added.

The Show All Gridlines, Show Alternate Gridlines, Show Every Third
Gridline, Show Every Sixth Gridline, and Show No Gridlines items all
refer only to the Surface category and behave just as you expect. In
particular the Show No Gridlines item will turn off the display of
the u,v coordinate curves entirely when a surface is redrawn (except,
of course, in wire-frame mode). While this option is available in
monochrome and stereo display modes, it is rarely if ever advisable
in these situations, and should be reserved for (occasional) use when
displaying a surface in color, where it can improve the
aesthetics.
The group of items, Show Original Surface, Show Conjugate Surface,
Set Associate Family Parameter..., Show Reflections, and Don't Show
Reflections, refer only to minimal surfaces given by Weierstrass
Enneper data (those at the bottom of the minimal surface submenu) and
are dimmed unless one of these is selected.
